Enchiladas Campesinas

Enchiladas originated in Mexico, where the practice of rolling tortillas around other food dates back at least to Mayan times. These divine dishes are a staple on all Mexican states, but in Oaxaca are mainly served with mole which adds a bold rich flavor.
