An absolute must-have, your choice of chicken breast or chicken legs covered with Oaxaca’s famous black mole made from chiles, nuts, seeds, spices and oaxacan chocolate.

Moles come in various flavors and ingredients, with chili peppers as the common factor. However, the classic mole from Oaxaca is the Mole Negro, which is a dark sauce served over meat. The dish has become a culinary symbol of Mexico

The ingredients are roasted and ground into a fine powder or paste. This roasting and grinding process is extremely laborious and takes several hours accomplish by hand. Traditionally, this work was shared by several generations of women in the family, but after the arrival of electric mills, it became more common to take the ingredients to be ground. Many families have their own varieties of mole passed down for generations, with their preparation reserved for special events in large batches.
