Maguey red worms are among the most prestigious insects consumed in Oaxaca Mexico and were once a vital source of protein for the Zapotecs. Today, they make it crispy, fried snacks, salsa, succulent taco filling and much more... What is Agave Espadin Plant ?. Agave Espadin (angustifolia) is the most commonly used agave in mezcal. It generally takes about 8-12 years to mature, and it can be grown in a variety of farm and wild environments. It is the most-commonly domesticated and most-easily cultivated agave used in mezcal production.
